one-pan chicken fajitas

These fajitas are so unbelievably delicious and come together so fast! (truth be told, I love preparing this one on a Sunday so I have a super quick and easy Monday or Tuesday night dinner ready) πŸ‘©β€πŸ³

recipe (serves 3-4)


ingredients

  • Β½ brown onion

  • 3 capsicums (the more colour the better)

  • Ground cumin

  • Sweet paprika

  • Dried oregano

  • 4 chicken thighs

  • 2 tbsp soy sauce

  • Olive oil

  • Salt


method

1. Thinly slice your onion and capsicum and lay them out in a single layer on your tray. Add 1 tsp of cumin, 1 tsp paprika, 1 tsp oregano, a drizzle of olive oil and a sprinkle of salt. Use your hands to coat all the vegetables in the spices. Set aside.

2. In a large bowl, add in the chicken, 1 tsp of cumin, 1 tsp paprika, 1 tsp oregano, a drizzle of olive oil, the soy sauce and a sprinkle of salt. Mix until the chicken is well coated in the spices.

3. Nestle the chicken in amongst the vegetables and pop it into the oven at 180C for 30 to 35 minutes or until the chicken is completely cooked through.


tip

I served mine with roasted potatoes and avocado!
