honey, soy chicken bowls

School is BACK, which means we all need a few more 30-minute recipes that we can whip up that are both delicious and nutritious. This recipe is super easy and some of it can be prepared the night before or in the morning to save you even more time and energy!

recipe (serves 3-4)


ingredients

  • 6 boneless skinless chicken thighs (you can also use chicken tenders)

  • 2 tbsp sesame oil

  • 2 tbsp soy sauce

  • 1 tbsp rice wine vinegar

  • 1 tbsp ginger paste

  • 1 tbsp honey

  • 3 tbsp sesame seeds

  • 2 bunches broccolini

  • 2 cups green beans

  • Brown rice (cooked according to packet instructions or simply use this microwavable rice)

  • Salt


method

1. In a small bowl mix together the sesame oil, soy sauce, rice wine vinegar, ginger and honey and sesame seeds.

2. Place the chicken in a bowl and pierce each piece with a fork before pouring over the marinade. Mix well with tongs and place in the fridge for an hour or up to overnight.

3. Pour the chicken onto a non-stick tray and bake in a 180C preheated oven for 25 minutes or until the chicken is completely cooked through.

4. While the chicken is cooking, bring a large pot of water to the boil. Wash the broccolini and green beans. Remove the stems off the beans and cut the broccolini into large chunks. Add a sprinkle of salt to the boiling water followed by the vegetables. Allow to cook for 6-7 minutes or until slightly tender). Drain the water from the beans.

5. Time to serve!! At the bottom of the bowl put the rice, followed by the veggies and then the chicken on top. Drizzle each with a bit more soy sauce and add a sprinkle of sesame seeds on top too! That simple!
