apple & raisin muffins

It’s no secret that I love to bake… especially when I know I am going to be sharing what I make with people that I love! These muffins are the perfect breakfast and study snack that the whole that the whole family will love!

recipe (makes 12)


ingredients

  • 2 apples, washed and grated (I used Granny Smith)

  • 1.5 cups buckwheat flour

  • 1 cup almond meal

  • 1 tsp baking powder

  • 1 tsp baking soda

  • 1 tbsp cinnamon

  • Pinch salt

  • 1/2 cup raisins

  • 1/2 cup honey or maple syrup

  • 1 tsp vanilla extract

  • 1/2 cup milk

  • 1/4 cup light olive oil


method

1. Preheat your oven to 180C and put some patty pans in a muffin tin.

2. In a large bowl, mix together the buckwheat flour, almond meal, baking powder, baking soda, cinnamon, salt and raisins.

3. Add the grated apple to the large bowl and coat in the flour mixture.

4. Add the honey, vanilla extract, milk and olive oil. Mix until just well combined.

5. Distribute the mixture evenly into the patty pans and gently tap the tray on the bench to settle the batter.

6. Bake for 15-20 minutes rotating the tray every five minutes to allow for even cooking.


tip

This recipe makes 12! If you don’t get through them all, simply freeze them and heat them up in the oven when you or your teen feels like one!
