green bean salad

I have made SO many different variations of this salad over the years so feel free to get creative with this one! I made this using the ingredients I had left in the fridge, and it came out so yummy that I just HAD to share it! This is going to be on our Christmas table and I am so excited!

recipe (serves 4)


ingredients

  • 500g green beans

  • ¼ cup chopped parsley

  • ¼ cup sundried tomatoes

  • 1 cup olives, I love the green Sicilian olives

  • ¼ cup slithered almonds

  • 1 tbsp wholegrain mustard

  • 1 tsp honey

  • 2 tbsp olive oil

  • 1 tbsp balsamic vinegar

  • Salt


method

1. Fill a medium pot with water and bring to the boil. When it comes to the boil, add in two tbsp of salt and the green beans. Allow to cook for 7-8 minutes. Drain and set aside.

2. In a large bowl, mix together the parsley, sundried tomatoes, olives, almonds and the slightly cooled beans.

3. In a small bowl, mix together the wholegrain mustard, honey, olive oil, balsamic vinegar and a pinch of salt.

4. Add the dressing to the beans and mix until well combined. You can eat it straight away or pop it in the fridge for 30 minutes for the flavours to develop (SO GOOD).
