let’s talk about ADDING more veggies to our plates

There are some very average ways to prepare vegetables that even me, a veggie lover, probably wouldn’t enjoy all that much. The good news is, veggies can be such a FUN and DELICIOUS addition to our diet, we just need to find a way that we enjoy eating them. First things first, just a moment to acknowledge that all of us have different taste and texture preferences and something I find delicious may not work for you and that’s okay.

Growing up, vegetables were always on offer. My mum and my nonnas prepared vegetables as part of every meal. I can’t ever remember being told to “eat your vegetables”. For me, and my siblings, vegetables were just part of the meal and prepared in such a way that they were delicious and as much of a star as the meat on our plate. I hope that this post inspires you to find some new and creative ways to get veggies on the table for you and your family. Remember, sometimes simple is all you need. Don’t underestimate the deliciousness that a drizzle of olive oil and a sprinkle of salt can make.

5 ways to add veggies to your teen’s plate

1. grate them

You can grate up veggies like carrots, zucchini, sweet potato and pumpkin and add them to your pasta sauce, zucchini slice or meatballs.

2. add them to a frittata

Slice up some zucchinis and mushrooms and chuck them in a frittata! So so yum! Here is my nonna’s recipe.

3. make savoury muffins

When I was working at Target in Highpoint, I would always head over to Muffin Break and get myself a savoury muffin for lunch - I just LOVED them! I have a recipe for pumpkin, feta and spinach muffins that you just HAVE to try!

4. load them into a stir fry

Growing up, stir frys were often on the menu. When it’s a weeknight and time is limited, being able to throw everything in a pan and get dinner on the table in a flash is the BEST. There are so many yummy vegetables you can add to a stir fry - get creative with mushrooms, capsicum, bean sprouts, baby corn, carrots, green beans, the list is endless. The thing that makes them taste delicious is the sauces you use, get creative with soy sauce, sesame oil, oyster sauce and the myriad of others you might find on the shelf at the supermarket.

5. roast them

I couldn’t not include this. Something special happens when you thinly slice some potato, eggplant and capsicum, drizzle them generously with olive oil and season them with salt and bake them. The combination is just delicious.
