orange & poppy seed muffins

This might just be my new favourite muffin recipe. Oranges are in season and each week I look for new ways that I can add them into my diet. Over the weekend I found myself with some time and the desire to bake and these came out better than I could have ever hoped. They are perfect for breakfast, an afternoon snack or even something fun to bring along to a gathering to share with loved ones. Please let me know if you make them, I’d love to see pics!

recipe (makes 12)


ingredients

  • 3 eggs

  • 1/3 cup olive oil

  • ¼ cup maple/honey

  • Juice of ½ orange

  • Zest of one orange

  • 1 tsp vanilla extract

  • 3 tbsp poppy seeds

  • 2 cups almond meal

  • 1 tsp baking powder

  • 1 tsp baking soda

  • Pinch of salt

  • Flaked almonds for the top


method

1. Preheat oven to 180C.

2. Place patty pans in the muffin tray.

3. In a large bowl mix together the almond meal, poppy seeds, baking powder, baking soda, and salt. Set aside.

4. Mix together the eggs, olive oil, honey, orange zest, orange juice and vanilla until well combined.

5. Add the wet mixture into the large bowl and mixed until combined.

6. Spoon the mixture evenly into the 12 patty pans. Sprinkle the top of each muffin with the slithered almonds.

7. Bake for 15-20 minutes, rotating halfway. You will know they’re ready when a skewer inserted into the centre comes out clean.


tip

This recipe makes 12! If you don’t get through them all, simply freeze them and heat them up in the oven when you or your teen feels like one!
