easter rocky road
If you’re looking for something easy to make that everyone will just love, then you need to try this rocky road!! It is salty, sweet, delicious and just the perfect edible gift to share with the people you love!

ingredients
1 cup dates, chopped
2 cups popcorn
1 cup roasted peanuts
1 cup toasted coconut flakes
2 tbsp peanut butter
360g 70% dark chocolate (I used Cadbury baking chocolate)
Salt
Sprinkles (the brighter the better)

method
1. If your peanuts and coconut flakes aren’t toasted, start by popping these on a linked baking try and toasted them in a 180C oven for 10-15 minutes or until golden.
2. In the microwave or over a double boiler, melt the chocolate.
3. While the chocolate is melting, pour the dates, popcorn, peanuts and coconut flakes into a large bowl and mix well.
4. When the chocolate is melted, stir through the peanut butter and a pinch of salt.
5. Pour the chocolate mixture into your large bowl of goodies and stir until everything is coated in chocolate.
6. Pour the mixture onto a linked baking tray and sprinkle the chocolate baubles over the top.
7. Pop your delicious rocky road into the fridge to set for at least 3 hours.
8. Remove from the fridge and use a large knife to break it up into large chunks. That’s it!! Store in an airtight container or put it straight on the table for your loved ones to enjoy!
