blueberry weet-bix loaf
Last weekend I made this outrageously delicious loaf to snack on and to have for breakfast and I just HAD to share the recipe with you! This is perfect for on the go and popping into school lunch boxes for lasting energy for your teen! Hope you love this one!
recipe (makes 1 loaf)
ingredients
1 cup wholemeal flour
6 weetbix
1 tsp cinnamon
1 tsp baking soda
Pinch of salt
¼ cup honey
1 egg
1 cup milk
¼ cup olive oil
1 cup frozen blueberries
method
1. Preheat your oven to 180C and line your loaf tin with baking paper.
2. Blitz the weet-bix in a food processor until they resemble a fine crumb. Simply mix all together in a bowl.
3. In a large bowl mix together the wholemeal flour, weet-bix, cinnamon, baking powder, salt, honey, egg, milk and olive oil. Set aside.
4. Pour the blueberries into a small bowl and sprinkle over a tablespoon of flour (this is going to prevent the blueberries sinking to the bottom of the loaf). Coat the blueberries in the flour and then fold them into the loaf mixture.
5. Pour the batter into your prepared baking tray and bake for 40-45 minutes or until completely cooked through (TIP – gently inset a knife into the centre and if it comes out clean it’s done!).
6. Allow to cool completely before slicing and enjoying coated in nut butter or lathered in Greek yoghurt.
