cottage cheese breakfast bread
Cottage cheese is currently all the rage, so I felt that a recipe that included it was definitely needed (especially because most people have a tub of it in their fridge!). This isn’t your standard savoury cottage cheese bread (even though that’s super yummy), this is a fruit and seed loaded version so that your teen has all the energy they need to make it through a full day of school!
recipe (makes 1 loaf)
ingredients
1 ½ cups rolled oats
¼ cup pumpkin seeds
3/4 cup raisins
½ cup chopped dry figs or dates
1 tsp all spice or cinnamon
½ tbsp baking powder
1 tsp vanilla
200g cottage cheese
2 eggs
Drizzle of honey (optional)
method
1. Preheat your oven to 180C.
2. In a large bowl mix together the oats, pumpkin seeds, raisins, dry figs or dates, cinnamon, baking powder, vanilla, cottage cheese, eggs and a drizzle of honey.
3. Pour the mixture onto a lined baking tray. Use your hands to form the mixture into a dome shape.
4. Bake for 20 minutes, then cover with foil and allow to cook for another 35 minutes (this is to stop the dry fruit from burning).
5. Allow to cool before slicing and enjoying by itself, lathered in butter or nut butter – so delicious!
