beef & veggie stuffed peppers

Now when it comes to stuffed peppers my nonna’s are the best by far! BUT, unfortunately I don’t get access to her amazing peppers all the time so I need to make them myself at home!

This is my variation of them, which I still think are so yum! Stuffed peppers are great for a weeknight because you can actually prepare them the day before you need them (or over the weekend) and all you need to do is pop them in the oven when you get home – so easy!!

recipe (makes 6)


ingredients

  • ½ red onion, finely diced

  • 1 tsp granulated garlic

  • 2 carrots, grated

  • 1 tbsp paprika

  • 2 tbsp Italian seasoning

  • 500g ground beef mince

  • Generous grating of parmesan (let the heart decide how much)

  • 3 large red capsicums

  • Olive oil

  • Salt


method

1. Preheat your oven to 180C with the fan on.

2. In a large bowl, use your hands to mix together the onion, garlic, carrots, paprika, Italian seasoning, mince, parmesan and a pinch of salt. Set aside.

3. Cut each of the capsicums in half (length ways) and remove the seeds.

4. Drizzle some olive oil on the bottom of a non-stick tray. Place the peppers on the tray with the hollow part face upwards. Sprinkle with salt.

5. Place the mixture into the inside of the peppers.

6. Bake for 30-40 minutes or until completely cooked through.
