one pan salmon & veg

Coming at you with a one pan wonder! This is an absolute winner in my eyes because it is delicious and only involves the use of one tray (no clean up). This is also a great one to double so you have leftovers for your lunch the next day!

recipe (serves 2)


ingredients

  • 2 fillets of salmon

  • 2 sweet potatoes (4 if they are the little ones)

  • 2 capsicums (red, yellow or green)

  • ½ red onion

  • 1 large eggplant

  • 2 tbsp soy sauce

  • 1 tsp honey

  • 2 tbsp paprika

  • 1 tbsp cumin

  • 1 tbsp dried oregano

  • 1 tsp chilli flakes

  • Juice of ½ lemon

  • 1 clove garlic, minced

  • Olive oil

  • Salt


method

1. In a small bowl, mix together the paprika, cumin, dried oregano and chilli flakes. Set aside.

2. Preheat oven to 180C with the fan on and line a large baking tray with baking paper (you don’t need to do this if you have a good non-stick tray).

3. Chop up all your vegetables into thin strips and pop them in the lined pan. Drizzle with a couple of tbsp of olive oil and add a sprinkle of salt and half of your dried spice mixture. Mix well and put into the oven.

4. While the vegetables get a head start in the oven, you need to start marinating the salmon. In a large bowl put your salmon, the remainder of the spice mixture, the garlic, soy sauce, honey, lemon juice and a small pinch of salt. Mix until combined.

5. Once the vegetables have been in the oven for 20 minutes, take them out and lay the pieces of salmon on top. Make sure you pour the remainder of the marinade all over the veggies.

6. Return to the tray to the oven for 20-25 minutes or until the salmon is completely cooked through.


serving suggestion

I can’t have this without some sliced avocado and fresh parsley, they just compliment everything so well! I also love to serve mine on a bed of rice, so good!!
