turmeric roasted cauliflower

This is another one of those recipes where I was desperate to use up things I had in the pantry and fridge before the weekly shop. I had a head of cauliflower and thought, “I wonder what that would taste like roasted with almonds?” Before I knew it I was adding all kinds of spices and it has now become my mum’s favourite side.

This one is definitely a family favourite! I love that it is all done in the one pan as well, which makes for super easy clean up. I really hope you try out this recipe!

recipe (serves 3-4)


ingredients

  • 1 head of cauliflower

  • 2 cloves garlic, crushed

  • ¼ cup almonds, roughly chopped

  • ¼ cup chickpeas (half a 400g can)

  • ¼ cup of raisins/sultanas

  • 1 tbsp turmeric powder

  • Olive oil

  • Salt


method

1.     Preheat your oven to 180C.

2.     Cut the cauliflower into 3 inch florets, be sure to chop up the stems too. Lay them in a single layer on a non-stick baking tray.

3.     Add the crushed garlic, almonds, chickpeas, raisins and turmeric to the tray along with a sprinkle of salt. Generously drizzle olive oil over the top and use your hands to ensure that everything is well coated in the seasonings and olive oil.

4.     Bake uncovered for 40 minutes or until the cauliflower has started to go golden on the outsides.


tip

My favourite way to enjoy this is alongside a bed of rice topped with grilled chicken.
