turkey and veggie patties

This is one of my go to recipes when I know I won't have time to organise dinner and need to prepare something in advance. It comes together really quickly and can be kept in the fridge overnight before baking. I used ingredients that I usually always have on hand in the pantry and fridge and I feel like the combination together pack them full of flavour.

recipe (makes 12 patties)


ingredients

  • ½ white onion, finely diced 

  • 1 clove garlic, minced

  • 1 large zucchini (or 2 small ones), grated

  • 2 large carrots, (or 3 small ones), grated

  • 1 tbsp dry oregano 

  • 1 tbsp paprika

  • 1/3 cup almond meal

  • Zest of 1 lemon 

  • 1.5 tbsp salt 

  • 1 kg ground turkey mince


method

1. Preheat your oven to 180C with the fan on. 

2. If you don’t have a non-stick pan, line a baking tray with baking paper.

3. In a large bowl, mix together the onion, garlic, zucchini, carrot, oregano, paprika, almond meal, lemon zest and salt. 

4. Add the turkey mince and mix well with your hands until everything is well combined. 

5. Roll the mixture into balls and assemble on the tray (they don’t need to be too spaced out). Flatten each ball with the palm of your hand. 

6. Bake for 30-40 minutes or until completely cooked through. 


serving suggestion

Absolutely delicious with a side of roast potatoes and a simple salad and equally as delicious in a burger with cheese, avocado, spinach leaves and beetroot.
