apricot muesli bars

Dried apricots used to be one of my favourite snacks growing up so I was determined to see if I could come up with a yummy snack using them. This recipe is actually so so easy and make for the perfect on the go breakfast or snack. It is also really yummy broken up and served with Greek yoghurt and fresh berries too.  

recipe (makes 12)


ingredients

  • 3/4 cup almonds

  • 1/2 cup Brazil nuts

  • 2 cups rolled oats

  • 1/2 cup sunflower seeds

  • 2 tsp cinnamon

  • 1/2 tsp salt

  • 1 tsp baking powder

  • ½ cup medjool dates

  • ½ cup dried apricots

  • 1/4 cup olive oil

  • 1/2 cup boiling water

  • 2 tbsp honey

  • 1 tsp vanilla


method

1. Preheat fan forced oven to 180C.

2. In a food processor blend together the almonds and brazil nuts until they form a chunky powder consistency.

3. Pour the nut mixture into a large bowl along with the oats, sunflower seeds, cinnamon, salt and baking powder and mix until well combined.

4. Add the dates, dried apricots, olive oil, boiling water, honey and vanilla into a food processor and blitz until it forms a paste.

5. Add the date and apricot mixture to the dry ingredients and mix until well combined.

6. Line a 27.5cm x 17.5cm x 3.5cm slice and brownie pan (available at Woolworths) with baking paper.

7. Pour the mixture into a tray and press the mixture down into an even layer.

8. Bake for 25-30 minutes or until lightly golden.

9. Remove the oven and allow to cool for an hour before slicing into muesli bars. Store in an air tight container for up to 2 weeks.
