rice with carrots & dates
My brother calls this recipe ‘when rice dates an almond’… very clever - it literally says what it is! This is a delicious side dish loaded with dates, almonds, parsley, carrots and rice. recipe (serves 5-6)
ingredients
Half brown onion, thinly sliced
1 clove garlic, crushed
3 carrots, grated
1 tsp chilli flakes (take this out if you don’t like the heat)
2 tbsp almond butter
Zest of 1 orange
Juice of 1/2 orange
2 cups brown rice, cooked according to packet instructions
1/2 cup parsley, roughly chopped
½ cup slithered almonds, lightly toasted
1/2 cup dates, pitted and roughly chopped
Olive oil
Salt
method
1. In a non-stick pan over high heat, pour three tablespoons of olive oil.
2.Add the onion and the garlic. When they become aromatic and the onion is translucent add the carrots, chilli flakes a pinch of salt.
3. Sauté for a few minutes or until the carrots have cooked down.
4. While the carrots are cooking, work on the dressing. In a small bowl, mix together the almond butter, orange zest, orange juice, a couple of tbsp of olive oil and a sprinkle of salt.
5. Add the cooked rice, parsley, almond and dates to the carrot mix and pour over the dressing. Mix until all well combined. Taste for seasoning and adjust if you need to.
tip
You can serve this hot OR you can make it the night before and have it as a cold salad (which is my FAVOURITE way to have it!!).
