mango & vanilla smoothie bowl

Mangos are one of my favourite fruits and I absolutely LOVE them in smoothies!! In summer I will buy extra just to freeze them so I have plenty in the freezer when they go out of season! I hope you love this recipe as much as I do!

recipe (serves 1)


ingredients

  • 1 cup milk (depending on the strength of your blender – I used oat milk)

  • 1 cup frozen mango

  • 2 medjool dates

  • 1 small tub vanilla Greek yoghurt (I used Chobani Fit Vanilla High Protein Greek Yoghurt)

  • 2 tbsp chia seeds

  • 1 tbsp almond butter

  • 1 tsp psyllium husk


method

1. Place all the ingredients in a blender and blitz until it forms a thick texture. TIP: Put in the milk first so the chia seeds don’t stick to the blender.

2. Pour into a bowl (I like to use a spatula to get all of the smoothie out).

3.. Top with your favourite granola, coconut flakes, fresh berries – get creative!
