loaded breaky cookies
Now I know that the flavour and texture of walnuts isn’t for everyone, but there are so many nutritional benefits to ADDing them in and I promise it can taste delicious! These bliss balls are the perfect on the go breakfast, snack or after dinner sweet alongside a cup of tea.
recipe (makes 18)
ingredients
1 ripe banana
1 egg
1 tsp vanilla
½ cup peanut butter
2 tbsp honey (optional)
2 cups oats
1 tsp cinnamon
1 tsp baking powder
Pinch of salt
½ cup chopped walnuts
¼ cup chopped chocolate
method
1. Preheat your oven to 180C and line two baking trays with baking paper.
2. In a large bowl, mash the bananas. Add in the egg, vanilla, peanut butter and honey and give it a good stir. In the same bowl, add in the oats, cinnamon, baking powder, salt, walnuts and chocolate. Mix until combined.
3. Dollop the mixture into tbsp size balls onto the baking tray and flatten with your palm. Be sure to keep them an inch or so apart.
4. Bake for 15-20 minutes or until lightly golden on top. Allow to cool completely before transferring to an airtight container for storage.
Tip: If you’re not a huge fan of peanut butter, you can just as easily make this with almond butter. You can also swap out the walnuts for any nuts or seeds of your choice 😋
