crispy chickpea patties

I have been testing this one for a long time and I FINALLY nailed it!! If you’re looking for something super delicious for your lunchbox then you must make these! They would be super yummy in a wrap, in a salad or straight from the container as a snack in the afternoon!

You can’t use canned chickpeas here, it just doesn’t get you the crunchy outside and they don’t hold their shape (but still taste yum).

recipe (makes 8)


ingredients

  • ½ cup dried chickpeas

  • 2 tbsp curry paste (I used Thai Red Curry Paste in this video)

  • 1 tsp ginger paste

  • 1 tbsp almond butter

  • 1/2 cup chickpea flour

  • ¼ cup olive oil

  • 2 tsp salt


method

1. This is the most important step. Pour your chickpeas into a large bowl, cover them with water and leave them to soak overnight.

2. Rinse and drain the chickpeas. Pour them into a food processer along with the curry paste, ginger paste, almond butter, chickpea flour, olive oil and two tsp of salt. Pulse until the ingredients form a thick batter.

3. Roll the mixture into balls (about the size of golf balls) and place them on a non-stick baking tray.
Bake in a 180C oven for 40 to 45 minutes or until golden on the outside.
