chocolate & seed granola

I just love granola, I love the taste, texture and the smell that homemade granola fills the home with. It stores well in the pantry and is the perfect after school snack (or breaky) with some Greek yoghurt and fresh berries – it is filled with fibre, carbohydrates, protein, fat, and deliciousness

The perfect combo your teen needs for energy while they study, read, play sports, dance, practice their instrument or to help you to prepare dinner!

recipe (makes 4 cups)


ingredients

  • 1 cup oats

  • 1.5 cups buckinis

  • 1 cup mixed seeds (pumpkin, sunflower, flax)

  • 2/3 cup cacao

  • 1/2 tsp salt

  • 1 tsp cinnamon

  • 1/2 cup dates, pitted and roughly chopped

  • 1/3 cup maple syrup

  • 1/2 cup melted coconut oil


method

1. Preheat your oven to 180C and line a baking tray with baking paper.

2. In a large bowl, mix together the oats, buckwheat groats, mixed seeds, cacao, salt, cinnamon, dates and chocolate. Set aside.

3.  In a small bowl, mix together the maple syrup and coconut oil.

4. Pour the maple syrup mixture into the large bowl with the dry ingredients and mix until well combined.

5. Pour the mixture onto the lined baking tray in a single layer and bake for 20 minutes.

6. Remove from the oven and allow to cool for at least an hour.

7. Break up the granola into chunks and store in an airtight jar/container for up to two weeks.


tip

I love mine with some Greek yoghurt and berries, but you could also have it with milk OR you can do what my brother does and eat it straight from the container hehe
