choc banana muffins
These muffins are so easy to make and are PERFECT for your lunchbox or even breaky on the go! This is definitely one the whole family will enjoy!
recipe (makes 12)
ingredients
3 ripe bananas, peeled and mashed
½ cup light olive oil
2 eggs
½ cup honey
1 tsp vanilla paste
1 2/3 cup wholemeal plain flour
1 tsp baking powder
½ tsp baking soda
Pinch of salt
1 tsp cinnamon
1 cup chocolate chips
method
1. Preheat your oven to 180C with the fan on and pop some patty pans into your muffin tray.
2. In a large bowl, mix together the banana, olive oil, eggs, honey and vanilla paste.
3. Add the flour, baking powder, baking soda, salt and cinnamon and mix until just combined.
4. Fold the chocolate chips into the mixture.
5. Use two tablespoons to evenly distribute the batter into the patty pans.
6. Bake for 15-20 minutes or until the top is golden and you can pop a knife through the centre and it comes out clean.
tip
You can store your muffins in an airtight container for up to 5 days (they probably won’t last that long though!)
