chickpea & cauliflower salad

Food is a fantastic way to connect with the people we love!! If you’re looking for a delicious salad you can bring along and share with the people you love, look no further than my crispy chickpea and cauliflower salad!!

recipe (serves 2-4)


ingredients

  • ½ cauliflower, chopped into bite sized florets

  • 2 large red skin potatoes, chopped into bite sized pieces

  • 1 can chickpeas, rinsed and drained

  • 2 cups snow peas, halved

  • 2 cups spinach

  • ½ cup parsley, finely chopped

  • ½ cup walnuts, lightly toasted

  • 1 tbsp whole grain mustard

  • 1 tsp honey

  • 3 tbsp red wine vinegar

  • Granulated garlic

  • Paprika

  • Olive oil

  • Salt


method

1. Preheat oven to 180C.

2. You will need two trays. Put the cauliflower and potatoes on one tray and drizzle with olive oil, a pinch of salt and ½ tsp of granulated garlic. On the other tray, place the chickpeas in a single layer and drizzle with olive oil, 1 tbsp paprika, a pinch of salt and ¼ tsp granulated garlic.

3. Place both trays in the oven and roast for 40-45 minutes.

4. For the dressing, mix the mustard, honey, vinegar, two tbsp olive oil and a pinch of salt.

5. Assemble the salad in the large bowl. Put the spinach, snow peas, avocado, parsley, walnuts, roasted veggies and chickpeas in the bowl and drizzle over the dressing. Mix until the dressing is well distributed.


tip

This salad is delicious warm and just as delicious cool, so it is so versatile and perfect to bring to a gathering!! You can prepare it the night before and dress it on the morning of your gathering.
