carrot and cauliflower fritters

I am a little fritter obsessed at the moment so I couldn’t resist giving it a crack using some carrots and cauliflower I had sitting in the fridge. You could easily make this with sweet potato and broccoli too!

recipe (serves 2-3)


ingredients

  • 2 carrots, grated

  • 2 cups cauliflower, finely chopped

  • 2 heaped tbsp red curry paste

  • 2 cups chickpea flour

  • 2 tbsp almond butter

  • 2 cups water

  • 2 tsp salt

  • Olive oil


method

1. In a large bowl mix together the carrots, cauliflower, curry paste, chickpea flour, almond butter, water and salt.

2. Pour a couple of tbsp of olive oil onto a large non-stick frying pan over medium/high heat.

3. Once the oil is warm, use a ½ cup measuring cup to dollop the fritter mixture into the pan. Cook for 5-7 minutes on one side before flipping over.

4. Remove from the pan and place the fritter onto a paper towel lined plate.


serving suggestion

I like to serve these with a dollop of Greek yoghurt on top, some avocado and an easy green salad.
