baked apple oatmeal

This delicious and soul warming breakfast is something that you can make on a Sunday afternoon and have ready to go for the first few days of the week.

recipe (serves 4)


ingredients

  • 3 granny smith apples

  • 2 cups rolled oats

  • 1 cup crushed walnuts

  • 4 tbsp flaxseeds

  • 1 tsp baking powder

  • 2 tbsp cinnamon

  • ¼ tsp salt

  • ¼ cup light olive oil

  • 1 tsp vanilla

  • 2 tbsp honey

  • 1 ¼ cup unsweetened almond milk


method

1. Preheat oven to 180C.

2. Wash and thinly slice your apples (I left the skin on, but you can take it off if you like). Pour them into the bottom of a medium casserole dish (roughly 8x8 inch). Sprinkle over a tbsp of cinnamon, mix together and set aside.

3. In a large bowl, mix the oats, walnuts, flaxseeds, baking powder, 1 tbsp cinnamon and salt.

4. Add the olive oil, vanilla, honey, and milk to the large bowl and mix until combined.

5. Pour the oat mixture over the apples and use a spatula to ensure that every apple is covered.

6. Bake for 40-45 minutes or until set in the center and golden on top.


serving suggestion

Each morning you can grab some and reheat it in the microwave or enjoy it cold straight from the fridge. If you want to have this as a dessert serve it with vanilla ice-cream, if you want it for breakfast, I recommend a delicious yoghurt (but you do you!!).
