baked apples

Coming at you with a comforting winter breaky that will keep you satisfied all morning long! This also makes enough breaky for a few days, or if you like to share (unlike me), it will feed a few people in your family!

You can get this all prepped and cooked on the weekend and then before school or work heat up a serve and top with yoghurt – so so delicious!

recipe (serves 3-4)


ingredients

  • 4 granny smith apples

  • 1 cup rolled oats

  • 1 cup buckinis

  • ½ cup almond meal

  • 2 tsp mixed spice

  • 1/3 cup chia seeds

  • ¼ cup light olive oil

  • 1 tsp vanilla

  • 2 tbsp honey (more if you want it a bit sweeter)


method

1. Preheat oven to 180C and line a tray with high sides with baking paper.

2. Slice each apple in half lengthways and use a teaspoon to remove the core. You can also slice a little bit off the back of each apple to prevent them from sliding along the day. Place them face up on the tray. Set aside.

3. In a large bowl mix together the oats, buckinis, almond meal, mixed spice, chia seeds, olive oil, vanilla, and honey.

4. Use a tablespoon to fill each of the apples. Pour any remaining oats around the tray.

5. Cover with foil and bake for 30 minutes. Remove the foil and cook for another 30 minutes.


tip

You can leave this in the tray in the fridge, plate up what you like each morning, pop it in the microwave to heat up, and top with Greek yoghurt.
