weetbix breaky balls
As it turns out, there are SO many things that we can do with weetbix and one of those things is make bliss balls! This recipe is loaded with fibre from the weetbix , fats from the chia seeds and almond butter to support brain function, and dates for energy to think and learn. Whip these up on a Sunday and you have an easy on the go breaky for the whole week ahead for you and your teens to share. If you make these be sure to share because I’d love to see!
recipe (makes 18)
ingredients
5 weetbix
10 medjool dates, pitted
½ cup desiccated coconut + an additional cup for rolling
2 tbsp almond butter
1 tsp cinnamon
¼ cup chia seeds
3 tbsp water
½ cup choc chips
method
1. In a food processor, blitz together the weetbix, medjool dates, ½ cup desiccated coconut, almond butter, cinnamon, chia seeds and water. Add in the choc chips and blitz until well incorporated.
2. Pour the additional coconut into a shallow bowl.
3. Use your hands to roll the mixture into little balls (approx. 1 tbsp) and then coat them in the coconut and pop them on a plate. Repeat until there is no mixture left.
4. Put the plate full of bliss balls into the fridge to set for 1 hour and then store in an airtight container.
