vanilla overnight oats

Overnight oats are the perfect breakfast for those of us who don’t have much time in the morning to prepare breakfast. Sometimes if I know I will be working for a few early mornings in a row, I will prepare multiple at one time - it is such a time saver, particularly because you already went to the effort of taking out all the ingredients!

recipe (serves 1)


ingredients

  • 1/2 cup rolled oats

  • 1 cup milk (plus an extra couple of tbsp if you like it more milky) - You can use cows, oat, almond, soy or rice milk here.

  • 1 tsp chia seeds

  • 1 tsp cinnamon

  • 1 tsp vanilla essence

  • 1 tsp honey

  • ¼ cup dried fruit – Dried figs, sultanas, dates, raisins, apricots, apple all work well here. Chop these into small pieces if using larger pieces of dried fruit such as apple and apricots).
    Toppings: Fresh berries, almond butter, pepitas, sunflower seeds, coconut flakes (get creative).


method

1. In a bowl or jar (if you are taking it on the road with you) mix together the oats, milk, chia seeds, cinnamon, vanilla and honey.

2. Stir through the dried fruit. Cover and leave in the fridge overnight to set.

3. Top with your choice of toppings in the morning.


tip

I recommend making it in a glass jar or container that has a really secure lid (I learnt that lesson the hard way hehe)
