tahini chicken

If you’re looking for an easy and delicious recipe is for you! It is ready in under 40 minutes (including prep and clean up) and pairs so nicely with some roasted vegetables, rice and a salad.

recipe (serves 3-4)


ingredients

  • 500g chicken thighs/tenders

  • 1.5 heaped tbsp unhulled tahini

  • Juice and zest of one lemon

  • 1 clove crushed garlic

  • 1 tsp chilli flakes (optional but I really like it in this recipe)

  • 1 tsp pink Himalayan salt

  • 2 tbsp olive oil


method

1. Preheat the oven to 180C with the fan on.

2. In a small bowl, whisk the tahini, lemon zest and juice, garlic, chilli flakes, salt and oil in a bowl until the mixture is smooth.

3. Massage the tahini mixture into the chicken so that each piece is well coated in the mixture.

4. Place on a baking tray, and cook for 30-35 minutes or until chicken is completely cooked through.


tip

You can prepare this the night before or in the morning before you head off to work so all you need to do when you get home is pop it in the oven.
