tahini & choc chunk cookies

Okay these cookies are seriously delicious and make for the perfect on the go breakfast, lunchbox snack or afternoon pick me up! These are loaded with all the nutrients you need for sustained energy and are also nut free, making them PERFECT for any young person to bring to school!!

recipe (makes 18 cookies)


ingredients

  • 1 cup rolled oats

  • 1 cup desiccated coconut

  • 2 tbsp flaxseeds

  • ½ cup chocolate (I used a block of 70% chocolate that I roughly chopped)

  • ½ cup sultanas

  • ½ tsp salt

  • 2 eggs

  • 1 cup hulled tahini

  • ½ cup honey (or maple syrup)


method

1. Preheat your oven to 180C with the fan on and line two baking trays with baking paper.

2. In a large bowl, mix together the oats, desiccated coconut, flaxseeds, chocolate, sultanas and salt.

3. Add in the eggs, tahini and honey and mix until well combined.

4. Spoon the mixture into little blobs on the baking tray and then roll each of them into a little ball and gently flatten.

5. Bake for 15-20 minutes, rotating halfway through cooking. You will know they’re done when the kitchen smells amazing and the cookies are lightly golden on top. Allow to cool completely before transferring to an airtight container for storage.
