chocolate & coconut bliss balls

Here is a delicious nut free bliss ball that is perfect for your teens’ lunchbox!!
These are so easy to make and are a fantastic way to get everyone in the kitchen!

recipe (makes 16)


ingredients

  • 1 cup desiccated coconut

  • 1 cup sunflower seeds

  • 1 cup medjool dates, pitted

  • 2 tbsp cacao powder

  • 1 tsp vanilla extract or paste

  • ½ cup buckinis

  • 2 tbsp honey or maple syrup

  • 1/3 cup water

  • Pinch of salt

  • Extra desiccated coconut for coating the outsides


method

1. Put all the ingredients in a food processor and blitz until it forms a thick paste. If it isn’t coming together, add a dash more water. You will know it is ready to roll if you can pinch the mixture in between your fingers and it sticks.

2. Pour some desiccated coconut into a shallow bowl.

3. Roll the mixture into tbsp sized balls and coat in the coconut.

4. Place on a plate, cover with plastic wrap and pop them in the fridge to set for a couple of hours.

5. Store in an airtight container for up to two weeks.
